Lobster Rice Salad

Serve this cool summer salad moulded into the shape of a lobster or whole fish. 3/4 cup/175 ml lobster meat, diced 2 cups/500 ml cooked rice 1 tbsp/15 ml lemon juice 1 cup/250 ml celery, finely diced 1/4 cup/50 ml green pepper, finely diced 1/2 cup/125 ml crushed pineapple, drained 1 tsp/5 ml salt 1/2 tsp/2 ml pepper 1/2 cup/125 ml mayonnaise Combine all ingredients. Place in a bowl or mould. Chill for several hours. Turn out onto a bed of lettuce. Serves 6.
