Team a smooth lobster sauce up with delicate sole fillets to impress dinner guests.
2 lbs/1 kg sole fillets
3 tbsp/45 ml melted butter
1/4 tsp/1 ml paprika
2 cups/500 ml milk
2 tbsp/25 ml butter
1/2 tsp/2 ml salt
1/4 tsp/1 ml white pepper
1/4 tsp/1 ml garlic powder
1/2 tsp/2 ml Worcestershire sauce
1/4 cup/50 ml water
2 tbsp/25 ml cornstarch
1 egg yolk, beaten
1 cup/250 ml lobster meat, chopped
Place sole fillets in baking dish, drizzle with melted butter and sprinkle with paprika. Bake at 450 degrees F (230 degrees C) for 6-8 minutes.
In saucepan, over medium heat, combine milk, butter, spices and Worcestershire sauce. Combine water and cornstarch and stir into sauce. Pour a small amount of sauce into beaten egg yolk, then return mixture to the saucepan. Cook over medium heat, stirring constantly until thickened. Stir in lobster and heat.
Place sole on serving dish, cover with sauce and garnish with parsley.
