Lobster Cheese Rolls

This version of a lobster roll is slightly different from the traditional one. Be sure that your lobster is very well drained. 2 cups/500 ml lobster meat, drained and chopped 1/2 cup/125 ml celery, chopped 2 tbsp/25 ml onion, minced 1/2 cup/125 ml mayonnaise 1 tbsp/15 ml French dressing 1/2 cup/125 ml cheddar cheese, grated 1/3 cup/75 ml slivered almonds, toasted 2 tsp/10 ml lemon juice 1/2 tsp/2 ml salt 6 buttered rolls Combine first 9 ingredients and toss lightly. Top one half of each roll with the lobster mixture and cover with the other roll half. Wrap in aluminum foil and place in a 350 degree F (180 degree C) oven for 8-10 minutes. Serves 6.
