White Bread - Island Flavour

Dissolve 1 teaspoon of white sugar and 1 tablespoon of yeast in 3/4 cup of warm water. (I turn on the light in oven before I start and then put the mixture in oven to proof for about 10 minutes.)

Mix together 3 tablespoons of oil (I use canola) and 1 egg. I put this in the microwave and heat for 15 seconds when the yeast is ready.

In a large bowl, mix together 3 tablespoons white sugar, 1 tablespoon salt and 3 1/4 cups warm water. Add the yeast and egg mixtures. Then add approximately 11 to 12 cups of flour gradually. Knead five minutes. Put in greased bowl, cover, and let rise approximately 2 hours (I put this in oven also.)

Punch down, knead five minutes and let rise again approximately 1 1/2 hours.

Punch down, put in pans and let rise for about two hours.
Bake at 350 F for approximately 45 minutes. (I use 2 regular loaf pans, a round casserole dish and a smaller loaf pan.)
