Lois' Date Pinwheel Cookies

2 1/4 cup chopped dates 1 cup sugar 1 cup water 1 cup chopped nuts 1 cup shortening 2 cups brown sugar 3 eggs 4 cups flour 1/2 tsp. baking powder 1/2 tsp. soda Cook dates, water and sugar until thick. Add nuts and cool. Stir the shortening until creamy. Add brown sugar gradually. Mix well. Add eggs and beat well. Mix flour, baking powder and soda together. Add to creamed mixture. Chill thoroughly. Divide mixture in half and roll 1/4 inch thick. Spread with date mixture and roll up like jelly roll. Place in refrigerator until thoroughly chilled. Slice from 1/4 to 1/2 inch thick as desired. Bake at 400 F 10-12 minutes. Any dried fruits may be used in place of the dates. Submitted by Rosemary Mathis, Charlottetown.
