3/4 cup peanut butter 1/4 cup butter at room temperature 2 cups packed brown sugar 2 eggs 1 tsp. vanilla 1 cup all-purpose flour 1 cup whole wheat flour 2 tsp. baking soda 3/8 tsp. salt 1 cup quick cooking rolled oats 1 cup chopped apple Preheat oven to 350 F. In large bowl, mix peanut butter and butter, beat in brown sugar until blended and add eggs and vanilla. In another bowl, stir together flours, baking soda and salt. Gradually add to peanut butter mixture. Stir in oats and apple. Scoop up mixture with a large tablespoon and drop on an ungreased cookie sheet. Submitted by Arlene Power, Charlottetown
