Baked Orange Pudding

1 Tbsp. flour
1 cup granulated sugar
juice and grated peel of one orangev 2 cups water
1 Tbsp. butter

1/2 cup granulated sugar
1/2 cup milk
1 cup flour
1 tsp. baking powder
1/4 tsp. salt

To prepare sauce, combine flour and sugar in saucepan andstir in orange juice and peel. Gradually stir in water. Cook over medium heat, stirring constantly until mixture is smooth and thickened. Stir in butter. Pour sauce into greased baking dish. To make batter, cream butter and sugar, blend in milk. Stir together flour, baking powder and salt, blend into creamed mixture. Drop batter by spoonfuls onto hot sauce in casserole. Bake at 350 F 40-45 minutes. Serve hot or cold, with or without cream. Submitted by Verna MacMillan, Eldon.
