Fruit Pizza

Crust:
2 cups flour
1/2 cup brown sugar
1/4 cup icing sugar
1 cup softened butter

Topping:

12 oz. softened cream cheese
1/2 cup sugar
1 tsp. vanilla
variety of fruit (Kiwi, banana, peaches, strawberries, blueberries)

Crust: Mix the 4 ingredients together in a bowl until they form a ball. Press into a pizza pan. Bake at 350 F (180 C) 10-15 minutes or until golden brown. Cool.

Topping: Beat the 3 ingredients together and spread over crust. Arrange the fruit in any pattern and glaze.

Apricot Glaze: Mix 1/4 cup apricot jam or orange marmalade with 1 Tbsp. water. Rub through sieve. Submitted by Sue Morrison, Summerside
