
Amaretto Fruit Bread
Submitted by Norma June FergusonThis is an impressive, colourful light fruit loaf.
13/4 cups flour
1 Tbsp. baking powder
1/2 tsp. salt
2/3 cup white sugar
1 egg
1/4 cup vegetable oil
1 cup milk
3 Tbsp. amaretto liqueur
1 tsp. almond flavouring
1/2 cup coarsely chopped candied cherries
1/2 cup chopped candied pineapple
1/2 cup chopped mixed peel
1/2 cup slivered almonds
Preheat oven to 350 F and grease 9x5x3inch loaf pan. Mix first four ingredients in large bowl. Beat liquid ingredients together and pour in centre of flour mixture. Add remainder of ingredients and stir until moist. Bake 1 to 1¼ hours or until a knife inserted in centre of bread comes out clean.
