Amaretto Fruit Bread

This is an impressive, colourful light fruit loaf.

13/4 cups flour
1 Tbsp. baking powder
1/2 tsp. salt
2/3 cup white sugar
1 egg
1/4 cup vegetable oil
1 cup milk
3 Tbsp. amaretto liqueur
1 tsp. almond flavouring
1/2 cup coarsely chopped candied cherries
1/2 cup chopped candied pineapple
1/2 cup chopped mixed peel
1/2 cup slivered almonds

Preheat oven to 350 F and grease 9x5x3­inch loaf pan. Mix first four ingredients in large bowl. Beat liquid ingredients together and pour in centre of flour mixture. Add remainder of ingredients and stir until moist. Bake 1 to 1¼ hours or until a knife inserted in centre of bread comes out clean.
