Cranberry Loaf

2 cups flour
11/2 tsp. baking powder
1/2 tsp. salt
1 cup brown sugar
2 tsp. baking soda
2 Tbsp. hot water
2 eggs, beaten
5 Tbsp. butter, melted
1/2 cup orange juice
1 tsp. orange zest
11/2 cups chopped cranberries
1/2 cup chopped walnuts

Combine all dry ingredients, except the baking soda, into a bowl and make a well in the centre. Dissolve the baking soda in the hot water. Add to the dry ingredients along with the eggs, butter and orange juice. Blend well, then fold in the cranberries, orange zest and walnuts. Pour into a greased 9x5­inch loaf pan. Bake in a 350 F oven for 1 hour.
