4 tsp. baking powder
1/2 tsp. salt
1 Tbsp. white sugar
2 Tbsp. butter
1/2 cup mixed fruit

1 egg yolk, beaten with a little milk

Sift flour, baking powder, salt and sugar together in a mixing bowl. Cut in the batter with two knives or pastry blender until very fine. Stir in mixed fruit and then add cream gradually. mixing very lightly with a fork to make a soft dough. Do this with as little mixing as possible. Turn dough unto a floured board, knead a few times and form into a round shape about 3/4 inch thick. Score surface deeply with a sharp knife to mark wedges for serving. Brush top with beaten egg yolk and milk to glaze. Sprinkle lightly with a bit of white sugar. Place on a lightly greased baking sheet and bake in a 425 F oven 15 to 20 minutes until top is a deep golden brown. Serve warm.
