Submitted by Heather Stead, Charlottetown3 cups mini marshmallows
-2/3 cup evaporated milk
1/2 cup frozen orange juice concentrate, thawed
4 cups graham crumbs
1/4 cup chopped dates
3/4 cup raisins
1/4 cup candied red cherries
1 cup candied mixed fruit
1 cup chopped walnuts
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. cloves
1/2 pkg. cream cheese
1 tsp. milk
11/4 cups icing sugar
Drop of vanilla
Slowly heat the marshmallows, milk and orange juice, stirring until the marshmallows melt. Remove from the heat and combine with the remaining ingredients. Mix well. Press firmly into a 9x5x3Âinch loaf pan lined with wax paper. Cover and chill for 2 days. To make the frosting combine the cream cheese and milk, gradually adding the icing sugar and vanilla. Mix well.
