Christmas Mints

2 egg whites
1 lb. icing sugar
1 Tbsp. peppermint flavor
Red and green food coloring

Mix the egg whites and icing sugar in a large bowl to make a stiff dough. Add the peppermint, mix and roll dough out on wax paper using your hands into a block. Cut into 1­inch cubes and make a well in each cube with your finger and place a drop of food coloring in each and knead it to form ribbons of solid color. Shape into balls and place on wax paper covered baking sheets. Let sit for a few minutes until a light crust forms on the surface. Press each candy with a fork and let sit for a day to harden. Makes 4 dozen.
