Island Potato Donuts

This recipe is our family's favorite treat during the Christmas
holiday. They also freeze well and taste delicious warmed in the
2 cups wellcooked mashed potatoes
1/2 cup margarine
1 cup milk
21/2 cups white sugar
1 tsp. vanilla
6 cups flour
2 tsp. cinnamon
1 tsp. nutmeg
4 tsp. baking powder
11/2 tsp. salt
Bring the milk to a boil, add potatoes and margarine. Let cool.
Beat eggs. Add sugar and beat well. Add the 1st mixture and beat.
Gradually add flour and other ingredients. Pat dough out to halfinch
thickness on lightly floured board and cut with donut cutter.
Cook in hot fat.
