
Mom`s Scotch Cookies
Submitted by Marlene Bryenton, CharlottetownThis is a family favorite Christmas cookie. Each Christmas Mom
would take out her faithful cookie press and weave magic with
the dough one cookie at a time. As children, we called them finger
cookies, as the snowflake resembled eight little fingers. These
cookies were certainly a tradition in our family an they bring
back many cherished memories.
1 cup cornstarch
1 cup butter
1/2 cup icing sugar
1 cup flour
1 tsp. vanilla
This mixture will be dry. Use your hands to soften the dough. When the dough is soft, form it into a long shape so it will go through the cookie press. The cookies will be uniform in size, if your remove the press just as the dough appears on the cookie sheet. There is no need to grease the pan.
Set oven at 300 F. These cookies usually take 1215 minutes. They do not have to brown on the bottom to be cooked. Enjoy!
