Turkey Tetrazzini

6 Tbsp. melted butter
4 Tbsp. flour
1 tsp. salt
1/4 tsp. pepper
Dash of nutmeg
21/2 cups milk
1 medium chopped onion
1/4 cup grated Parmesan cheese
4 cups cooked spaghetti
2 cups diced cooked turkey
1/4 cup buttered bread crumbs

In a heavy saucepan, combine butter, flour, salt, pepper and nutmeg. Gradually whisk in milk, stirring constantly over medium heat until mixture is smooth and thickened. Add onions and cheese. Stir until the cheese is melted. Fold in spaghetti and turkey. Pour mixture into 6 cup casserole and sprinkle with crumbs. Bake at 350 F until bubbly and golden (about 30 minutes).
