Pineapple Drop Cookies - 1999

2 cups sifted flour 1/4 tsp soda 1 1/2 tsp baking powder 1 tsp salt 1 1/4 cup brown sugar 1 tsp vanilla 2/3 cup shortening 2 eggs unbeaten 3/4 cup canned crushed pineapple, well drained. Sift flour once. Add baking powder, soda and salt. Cream shortening and add sugar gradually. Cream together until light and fluffy. Add eggs, one at a time, beating well after each. Add pineapple and vanilla. Add flour, a small amount at a time, beating after hot oven 400 for 10 minutes or until done. Yield: about 4 dozen cookies. Submitted by Liz Hennen, Charlottetown, P.E.I.
