Lemon Spread

1/2 cup hard margarine softened
1/2 cup granulated sugar
finely grated rind of 1 orange
finely grated rind of 1 lemon
juice of 1 orange
juice of 1 lemon

Beat margarine in small bowl until light coloured. Add sugar very gradually while beating. Add rinds and juices. Spread on raisin bread and raisin biscuits. Makes 1 cup spread. So refreshing, a nice change from butter and jam. Submitted by Sadie Ramsay, Tyne Valley R.R. 2, P.E.I.
