2 1/2 cups minute rice or regular rice equivalent
2 1/2 cups water
10 oz mushrooms (buttons or sliced)
10 oz water chestnuts (sliced)
2 celery stalks (sliced thinly on angle)
1/4 cup chopped green pepper
1/3 cup chopped fresh green onion tops
2 Tbsp. chopped pimento (or strips)
1 1/2 -2 cups cut up turkey
1/2 cup onion (thinly sliced lengthwise)
1/2 cup butter or margarine
3 eggs (beaten)
1 1/2 tsp. salt
1/4 tsp. Pepper
19 oz Chinese bean sprouts with Juice
1 Tbsp. soya sauce

Prepare minute rice or cook regular rice. Cool. In large bowl combine drained mushrooms, drained, sliced water chestnuts, celery, green pepper, green onions, pimento, turkey and sliced onions. Set aside. Melt butter in frying pan. Add slightly beaten eggs, salt and pepper. Fry for a few moments, stirring with fork to keep broken up. Do not allow eggs to become too firm. Add rice and meat mixture. Stir to combine over low heat. Add a bit of water to simmer it too dry. Stir in sprouts and soya sauce. Simmer covered 10-15 minutes till hot. If too dry, add 2 Tbsp. butter or margarine. Serves 8. Submitted by Maureen Cudmore, P.E.I.
