Festive Lemon Coconut Squares - 1999
1/2 cup butter
1/4 cup unsifted icing sugar
1 cup flour
Cream butter and sugar. Add flour and mix well. Press into bottom of 8x8" pan. Bake at 350 F for 18-20 minutes. Remove from oven.
Topping:
2 eggs
1/2 cup white sugar
1 pkg. Lemon Jello pie filling
1/2 tsp. baking powder
1 cup chopped dates
1/2 cup red and green cherries (finely cut)
1 1/3 cup coconut
Method:
Beat eggs until thick. Gradually beat in sugar. Add remaining ingredients and spread over baked crust. Bake at 350 F oven for 25-30 minutes. For a quick icing, use a pre made vanilla frosting. Add lemon flavoring to taste.
Sprinkle finely grated lemon peel over the top. Decorate each square with a sliced cherry. These squares are a great addition to your holiday entertaining.
