Chocolate Mint Squares - 1999

1/4 cup Baxter 4/5 Blend 1/4 cup sugar 6 Tbsp. cocoa powder 1 tbsp. vanilla 1 egg 2 cups graham cracker crumbs 1/2 cup walnuts 4-1 oz squares semisweet chocolate 1 Tbsp. Baxter 4/5 Blend Icing: 1/4 cup 4/5 Blend 2 Tbsp vanilla instant pudding mix 3 Tbsp. milk 1 tsp. Peppermint Flavoring 2 cups icing sugar Put sugar, blend, cocoa, egg and vanilla in double boiler. Stir well until blended and the 4/5 Blend is melted. Add remaining ingredients and pack in 9x9" pan. Do not cook. Spread icing on top. Let stand 15 minutes. Melt 4 squares of chocolate and 1 Tbsp. of blend. Spread over icing and cut into squares when cold. Submitted by Louise Brown, Summerside, P.E.I.
