Christmas Cherry Cookies - 1999

1/2 cup shortening 1 1/4 cups white sugar 2 eggs, well beaten juice and grated rind of 1/2 lemon 1/4 tsp. almond extract 2 1/4 cups flour 1 1/2 tsp. baking powder 1/2 tsp. salt 2/3 cups chopped candied cherries 1/3 cup chopped candied pineapple 1/2 cup chopped almonds or filberts. Cream shortening and sugar together. Add beaten eggs, flavourings and lemon rind. Stir in dry ingredients, fruit and nuts. Mix well. Chill dough 20 mins. Form into 1 1/2 inch rolls. Wrap in waxed paper. Chill again 1/2 hour, slice 1/4'' thick. Place on greased cookie sheets. Bake at 400 for 10 minutes. Makes 5 dozen. Submitted by: Roma Clow, New Haven, P.E.I.
