Candy Cane Cookies - 1999

1 cup butter or margarine 1 cup white sugar 1 egg 1 tsp. vanilla 1/4 tsp. peppermint extract 2 1/2 cups sifted flour 1/2 salt 1/2 cup crushed candy canes 2 tbsp. sugar Beat together butter and sugar until light and fluffy, beat in egg, vanilla , peppermint extract blending well. Combine flour, salt, stir into creamed mixture. Wrap dough in waxed paper. Chill at least one hour. When ready to shape mix crushed candy with sugar. Roll one level tbsp dough, sprinkled with small amount of crushed candy mixture to make 6'' rope. Place on greased cookie sheet. Curve one end to form handle of cane. Repeat until all the dough and crushed candy have been used. Bake in moderate over 355 for about 12 min. or until lightly browned. Makes 3 1/2 dozen cookies. Submitted by: Kay Ford, Souris, P.E.I.
