8 cups pumpkin
6 cups white sugar
Method: Peel pumpkin, and remove seeds and insides. Cut pumpkin in small dices and put in cooking pot. Squeeze juice out of oranges and lemons into the pumpkin mixture. Cut up skins of oranges and lemons finely and add to the pumpkin. Add the sugar and stir thoroughly to dissolve. (Let stand overnight). Stir well before cooking. Cook about 45 minutes or until it becomes transparent. Stir frequently, as it scorches easily. Put in sterilized jars. You may add a few whole cloves (if desired). Cover when cool.
