Pickled Eggs

12 eggs 2 cups vinegar (500 mL)
2 Tbsp. white sugar (30 mL)
1 tsp. pickling spice, tied in cheesecloth bag
1 tsp. salt (5 mL)
1 medium onion

Hard boiled eggs, shell and place in large jar. Bring vinegar and rest of ingredients to boil and simmer for 8 minutes, Add hot mixture to eggs in jar. Seal tightly and let stand for two days. Submitted by: Carolyn Atkinson, Cumberland, P.E.I.
