Cranberry Squares - 1999

1/2 cup margarine 1 1/2 cups flour 1/2 cup brown sugar 1/8 tsp. salt Bottom Layer: Measure first 4 ingredients into large bowl. Mix until crumbly and press in 8x8" pan. Bake in 350 F oven for 10 minutes. 2 eggs (beaten) 1 cup white sugar 1/4 tsp. salt 1/3 cup flour 1 tsp. Magic baking powder 1/2 cup raisins 1/2 cup coconut 3/4 cup whole cranberry sauce (slightly drained) Top Layer: Beat eggs in same bowl, add remaining ingredients, mix well. Spread over bottom layer. Bake in 350 F oven for 25 to 30 minutes (until firm in center). Cut when cool. These will be chewy. Frost if desired. Icing: 1 1/2 cups icing sugar 3 Tbsp. butter 5 tsp. milk or water vanilla Beat all together in bowl and add more liquid, if needed for easy spreading. Submitted by Marjorie McGuigan, Iona, P.E.I.
