2 to 3 lb. Chicken cut in cubes
1/4 tsp salt
3/4 cup water
2 tbsp margarine
1/12 cups flour
Sweet & Sour Sauce
2/3 cup sugar
11 oz. bottle ketchup
1/4 cup water
1 tbsp corn starch
1/4 cup vinegar
To prepare batter: Combine egg and margarine in bowl, mix together with fork. Add salt. Blend in flour gradually. Batter will be stiff, add water slowly, beating with a fork until smooth. Batter should be thick enough for chicken to cling to.
To prepare sauce: Combine sugar, ketchup and vinegar in saucepan to simmer. Combine corn starch and water, stir into sauce. Cook to thicken.
Dip chicken cubes in batter, drop into hot fat, fry until golden brown 3-5 minutes. Serve with sauce.
This is a nice treat on Christmas Eve or a snack Christmas day.
