Pineapple Bran Muffins

1/3 cup crushed unsweetened pineapple, drained
enough pineapple syrup and orange juice to moisten
1/2 cup bran cereal
1 3/4 cup flour
1/2 cup sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
1 egg
1/3 cup vegetable oil
1/2 cup chopped pecans

Preheat oven to 400 F. In a large bowl, pour pineapple and 1 cup juice over the bran. Let stand for 10 minutes. In a separate bowl, combine the next 4 ingredients. Add egg, oil and pecans to the pineapple bran mix. Add the entire moist mixture to the dry ingredients all at once. Stir until combined, do not over mix. Spoon batter into greased muffin cups. Bake for 20-25 minutes or until firm. Submitted by Kathy Vail.
