Mincemeat Ice Cream Cake

1 Angel food cake
1 quart vanilla ice cream
1 cup prepared mincemeat
1/2 cup slivered blanched almonds, toasted
1 tsp. grated orange peel
1 cup whipping cream, whipped
marachino cherries

Rub crumbs off the cake. Cut cake horizontally into 3 even layers. Stir ice cream just to soften. Fold in mincemeat, almonds and orange peel and spread between cake layers. Freeze until firm. Before serving frost top and sides with whipped cream. Decorate with almonds and maraschino cherries. Makes 10 servings. Submitted by Elizabeth Hennen
