To dress up an Island baked potato, add this creamy lobster topping.
1 cup/250 ml lobster meat, diced
1 - 4 oz/125 g package cream cheese
1/2 cup/125 ml mayonnaise
1/4 cup/50 ml sour cream
2 tbsp/25 ml lobster juice
2 tsp/10 ml lemon juice
1/2 clove garlic, crushed
1 tsp/5 ml dried chives
Beat together cream cheese, mayonnaise and sour cream. Add lobster juice, lemon juice, garlic and chives. Beat well. Stir in lobster. Serve over hot baked potatoes.
Serves 6-8.
