This tasty way to serve mussels is ever so easy.
2 lbs/1 kg mussels, in shell
1 tsp/5 ml thyme
1 tbsp/15 ml chopped parsley
1 thinly sliced lemon
1 raw carrot, peeled and shredded
Clean mussels, place in a large pot and steam until the shells open (5-7 minutes). Drain broth into a saucepan, add thyme and parsley, cover and simmer for 10 minutes. Place mussels and lemon slices in a bowl. Pour in the broth mixture. Garnish with carrot.
