Filling:
1 jar of your favourite brand of mincemeat
Cookie dough ingredients:
1 cup butter or margarine, softened
1 1/2 cups granulated sugar
2 eggs
1/2 cup milk
1 tsp. vanilla
3 1/2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
Cream butter and sugar together. Beat in eggs 1 at a time, add milk and vanilla. Stir flour, baking soda and salt together and add to above mixture. Mix well. Roll out thinly on lightly floured surface. Cut into 2 1/2-inch circles. Arrange circles on greased baking sheet. Drop generous 1 1/2 tsp. mincemeat filling in centre. Cover with second circle. Press edges with floured fork or finger tips. Use utility scissor to make two 1/2 - 3/4-inch each vents on top. Sprinkle with sugar. Bake in 350 F oven until lightly browned, about 10 minutes. Makes about 4 dozen.
