These cookies have a wonderful flavour with or without icing. They make such a large batch and are great to give as gifts to friends and family at Christmas.
2 cups butter
3 cups brown sugar
4 beaten eggs
2 tsp vanilla
Beat until light and fluffy.
Blend or sift together:
4 cups flour
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
Add flour mixture to creamed mixture until blended well. Fold in fruit floured with 1 cup flour
4 slices candied green pineapple(cut up)
250 grams (1/2 lb.) red candied cherries (cut up)
1 kg dates (2 lbs) (chopped)
1 cup pecans (chopped)
1 cup brazil nuts (chopped)
1 cup walnuts (chopped)
Drop on greased cookie sheet. Bake at 300 for approximately 20 minutes.
Yield: 14 dozen
May substitute gumdrops for pineapple and cherries.
Note: These are nice with a bit of orange flavoured icing (optional).
