1/2 cup butter
1 cup brown sugar
1 cup mincemeat
2 eggs
1 tsp. rum extract
1/2 cup flour
1/2 tsp. baking powder
1/2 cup chopped nuts
1/2 tsp. salt
Cream butter and sugar. Blend in mincemeat, eggs and flavouring. Add dry ingredients. Mix well and add nuts. Turn into a 9x13" greased and floured pan. Bake at 350 F oven for 45 minutes. Top with butter icing and decorate with halves of red and green cherries.
