Angel Bread Cookies

1 cup shortening
1 cup margarine
1 cup icing sugar
3 cups flour
1 tsp. soda
1/4 tsp. salt
1 cup coconut
1 tsp. almond flavouring
1 cup chopped almonds, optional
1/2 cherry for top
Mix everything, except the coconut and almonds. Beat at medium
speed for 5 minutes. Stir in the almonds and coconut.
Roll a spoonful of dough into a ball, arrange on a cookie sheet
and flatten with a fork. Put cherry on top.
Bake at 350 F until light brown.
