2 Cups All Purpose Flour
2 Teaspoons Baking Powder
1/4 Teaspoon Baking Soda
1/2 Teaspoon Salt
1/2 Cup Butter Chilled
3/4 Cup Buttermilk

Combine sifted flour, baking powder, soda and salt. Using a pastry blender or 2 sharp knives, cut in butter until mixture has consistency of coarse cornmeal.

Pour buttermilk into mixture (all at once) stirring lightly with a large fork until it forms a soft dough.

1/2 Cup Shortening
2 Cups Flour
2 Eggs
3 Medium Bananas Mashed
1 Cup Sugar
1 Teaspoon Baking Soda
1/8 Teaspoon Salt
1/3 Cup Nuts
1/2 Cup Chopped Maraschino Cherries
1/4 Cup Chocolate Chips

Cream together shortening and sugar. Add eggs and cream well. Sift dry ingredients and add to creamed mixture. Stir in remaining ingredients. Bake at 350 F for 45 minutes in loaf pan.

1/2 tsp. salt
1/2 tsp. baking soda
2 eggs
1 cup sour cream or (milk with 1 tsp. vinegar added, let stand 5 minutes).
1/4 cup oil
1 cup finely chopped apple


1/4 cup sugar
3 Tbsp. flour
1/4 tsp. cinnamon
2 Tbsp. butter (soft)

In a large bowl, combine eggs, sour cream and oil. Add all at once to dry ingredients. Add apple. Put in muffin tins 2/3 full. Sprinkle on topping. Bake at 400 F 20-25 minutes.

Terry Fox Run - On Sunday, September 20th people had the incredible opportunity of running or walking across the Confederation Bridge to celebrate the 35th anniversary of the Marathon of Hope.

In addition to having unique flavours and sights, PEI has its own distinct sounds as well – namely the sounds of Celtic music! It can be lively and upbeat or mellow and relaxing, but either way, you’ll always associate the strains of Celtic music with Prince Edward Island once you’ve experienced it. Our cycling offerings are varied, from quiet rides in the country past tranquil farmland to challenging terrain.
