Lobster & Cheddar Quiche

Quiche is one of the most popular recipes for Mother’s Day. This Island‑style version a humble recipe a step further with the addition of fresh PEI lobster. Elegant, celebratory and perfect for brunch, it’s a simple way to make anyone feel extra special.

Yield: 4 to 8 servings 
Baking time: 30-45 minutes 

Ingredients

  • 1 1/2 cups lobster meat (about 1 1/4 lb lobster)
  • 10 eggs
  • 1 cup of heavy cream
  • Salt & Pepper
  • 1 prepared 9” pie crust
  • 1 cup of asparagus, chopped
  • 2 tablespoons of fresh chives, chopped
  • 1 1/2 cups white cheddar cheese, shredded

Directions

  1. Preheat oven to 375°F.
  2. Shell and chop pre-cooked lobster meat.
  3. Whisk eggs and cream in a medium bowl, seasoning with salt and pepper.
  4. Place pie dough into a 9" pie plate.
  5. Add lobster, eggs/cream, asparagus, chives and cheddar to the pie crust.
  6. Place quiche in the oven and immediately turn the oven down to 325°F.
  7. Bake for 30-45 minutes on the bottom rack until the middle is set.
  8. Let cool slightly and enjoy!

This recipe is packed with protein from the lobster, cheese, eggs and fibre from the asparagus, making it a filling and satisfying meal anytime of day.
