Baked Mussel Special

The spices in this quick casserole do not overpower the true flavour of the mussels. 3 cups/750 ml cooked, shucked mussels 2 tsp/10 ml grated onion 1 clove garlic, minced 1 tbsp/2 ml chopped parsley 1/2 tsp/2 ml paprika 1/2 tsp/2 ml oregano 1/3 cup/75 ml parmesan cheese 1/2 tsp/2 ml salt 1/4 tsp/1 ml pepper 1/2 cup/125 ml dry bread crumbs 1/4 cup/50 ml melted butter Spread mussels in a greased baking dish. Mix onion, garlic, parsley, oregano, cheese, salt and pepper. Sprinkle over mussels. Top with crumbs and drizzle with melted butter. Bake, uncovered in a 400 degree F (200 degree C) oven for 20 minutes. Serves 4-6.
