Chocolate Chip Carrot Cake Cookies
2 cups all purpose flour
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. ground nutmeg
1 stick margarine (room temp.)
1/2 cup white sugar
1/3 cup light brown sugar (packed)
1 large egg
1 tsp. vanilla
1 cup coarsely grated carrots
1 small can crushed pineapple(well drained)
1 cup chopped walnuts
1 cup semi-sweet chocolate chips
Method: Preheat over to 350 . Mix flour, cinnamon, baking soda and nutmeg. Beat butter , sugars, egg and vanilla in a large bowl until well blended. With mixed gradually add carrot and pineapple, then flour mixture. Beat until blended. Stir in nuts and chips by hand. Drop by rounded tablespoons on non-greased cookie sheets. Bake 12-14 minutes.
