Meat Loaf
Sauce:
1/2 cup margarine
1/2 cup chopped onion
1/2 cup ketchup
1/4 cup brown sugar
1 1/2 tsp. chili powder
1/8 tsp. pepper
1 tsp. salt
3 Tbsp. Worcestershire sauce
1/8 tsp. Tabasco sauce
To make the sauce, melt the margarine and saute the onion. Add remaining ingredients and simmer 5 minutes, stirring occasionally.
Loaf:
2 lbs. lean ground beef
2 eggs
1/2 cup cracker crumbs
1/3 cup chopped green pepper
1/4 cup milk
1/4 cup ketchup
1 1/2 tsp. salt
1/4 tsp. pepper
Onion rings optional
Mix above loaf ingredients and firmly pack into a 9x5inch pan. Arrange onion on top, if desired. Pour the sauce over it and tightly cover with foil. Bake at 350 F for 1 hour.
