ADL Buttermilk & Cheddar Biscuits

Credit: Chef ILona Daniel & Explore Summerside
Yield: 15
Baking time: Approximately 12-14 minutes

Ingredients

  • 3 cups flour
  • 1/4 cup plus 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 3/4 cup Dairy Isle cold butter, cut into pieces
  • 1 1/2 cups coarsely shredded ADL Aged Cheddar cheese
  • 1 cup ADL buttermilk

Directions

  1. For best results, chill your butter in the freezer for 10 to 20 minutes in advance. It's ideal that the butter is very cold for light, flaky, buttery biscuits.
  2. Preheat oven to 400F.
  3. In a large bowl, combine dry ingredients.
  4. With a pastry blender or two knives (using in a scissor-fashion), cut in butter until mixture resembles coarse crumbs. Stir in cheddar cheese and
    buttermilk.
  5. Turn dough onto a floured work surface (dough will be crumbly) and fold gently using your hands until dough is smooth and holds together (see video for demonstration).
  6. Cut into desired shape and place on baking sheet lined with parchment paper. Brush tops with a beaten egg (optional).
  7. Bake in oven until biscuits are cooked through and golden brown about 12-14 minutes.
