Cranberry Pudding

  • 1 1/3 cup flour
  • 1 tsp baking soda
  • 1/4 tsp salt (optional)
  • 3/4 cup molasses
  • 1/2 cup boiling water (mix into molasses)
  • 1 1/2 cups cranberries

Stir flour, baking soda, and salt (if using) in steam dish. Add water and molasses mixture. Stir. Fold in cranberries. Steam for 2 hours.

Sauce

  • 1/4 cup butter
  • 3/4 cup cream or canned milk
  • 3/4 cup white or brown sugar

or brandy sauce

  • 1/3 cup plus 2 tbs. butter
  • 3 tbs. brown sugar
  • 1 tbs. dark corn syrup
  • 1 tbs. brandy

For both sauces, mix and heat until slightly thickened.
