PEI Potato Pizza

This recipe is a fabulous dinner on its own and you can certainly get creative with toppings - add other veggies, roasted chicken, crumbled bacon or sausage meat.

Yield: 4 servings
Cooking time: 20-25 minutes

  • 1 pizza dough, room temperature
  • 1/4 cup olive oil
  • 1 medium PEI yellow fleshed potato, sliced

  • salt & pepper, to taste
  • 2 cups mozzarella cheese, grated

  • Remove potatoes from boiling water and place into a bowl of cold water to stop cooking.

  • Place potato slices in a single layer over the surface of pizza; season with salt & pepper.
  • Top with cheese and bake until crust is golden and cheese is bubbly, approximately 20 to 25 minutes. Serve immediately.
