I read that there is a season for harvesting oysters but they seem to be available all year round. How are the oysters kept once they are harvested?

Thank you for your question.
Oysters are actually farmed year-round. Spawning season is generally in the warmer months and you may get a little less flavor then, with peak flavor in September-December.
You can generally, expect an oyster to live 10-14 days out of water and always be sure to keep them cool in a fridge.
