Oysters can be found at most restaurants all year round - Colville Bay Oysters, Lucky Limes, Pickle Points, Tuxedos, Raspberry Point. plus many many more- all are varietals of the Malpeque oyster, but the "terroir" in which they are raised gives each varietal their own particular taste profile. You will definitely be able to see oyster harvesters in their dorys tonging for oysters and through Experience PEI you are able to sign up for their "Tong and Shuck" Island Experience and get a guided tour by an Island oyster fisherman. He will show how they are raised and where they are raised as well as shuck your own right out of the water.
You will not be disappointed if you are on an oyster quest, Sims Corner Steakhouse and Oyster Bar, Claddagh Oyster House, Carrs and The Lobster Shack are some restaurants with a great selection of Island oysters. Gallants Seafood in Stanley Bridge and Doiron's Seafood Market in Rustico are a couple places where you can buy oysters and take home and shuck your own!
