What are some recommended experiences for a senior that are not too physically demanding?

Thank you for reaching out to Ask an Islander! There are a lot of great authentic PEI Experiences that you could enjoy and many events! It is a bit tricky to suggest without knowing what kinds of things you are interested in but I'll give you some of my favourites and hope you like them too!
Orwell Corner Historic Village is a wonderful step back in time. Surround yourself with the flavour, mood and charm of a small village of the 1890s. In July and August, enjoy regular daily programming such as candle and ice-cream making, tours of the agricultural museum, first-hand view of the working farm and blacksmith shop and treats from our tea room and gift shop.
Lobster fishing is a big part of Island life, lobster eating is too! Combine those two with some fiddle music and you've got The Lobster Lovers experience with the Fiddling Fisherman! Pull your own lobster from a trap and enjoy a lobster dinner on board. There is no fresher way to eat PEI lobster! JJ's boat 'Chaisson a Dream' is set up for easy boarding. Once you're aboard, just sit back and enjoy!
Potato farming is also a huge part of Island life! Tators, Tractors and Tales is a great half-day experience on a local potato farm run by three generations. You may get your hands dirty in the Island red soil while learning about how the famous PEI Potato is planted, maintained, harvested and stored. Learn about farm machinery and farming practices used throughout the 1900s to present day. Visit the on-site antique farming museum. Wrap up this experience with a treat of PEI potato chips. The farming museum is amazing, I could spend half a day in there alone!
I can't forget to mention music! This little island has so many talented musicians and summers here are full of live music. Ceilidhs are the place to be in the summer in PEI. In the summer months you can find a Ceilidh almost every night of the week somewhere on PEI. Every Saturday evening starting June 29th Richard Wood: An Evening of Celtic Music at Stanley Bridge Hall for example is a toe tappin' time not to be missed!
Last but not least, our beaches! With over 3000 km of coastline, PEI has some of the best beaches in Canada. The Prince Edward Island National Park works very hard to be as accessible as possible. Cavendish beach has accessible beach access, mobility mats, accessible washrooms and designated parking for those with limited mobility. There is also a beautiful new Ocean View Lookout that is only a short walk from the parking lot off Gulf Shore Parkway in Cavendish. You can walk to the end for some breathtaking views, stop and rest on one of the benches and stay long enough to watch the sun go down!
